Make this fragrant, buttery rice dish your go-to meal when you’re a little tight on time or budget.
Ingredients
Butter Rice
3 cups basmathi rice (or any rice of your choice)
2 tbsp butter
3 long beans, chopped
¼ carrot, chopped
¼ red capsicum, chopped
¼ green capsicum, chopped
½ yellow onion, chopped
Salt and pepper to taste
1 tsp of mushroom seasoning or chicken seasoning powder (optional)
Fried Prawns
3 tbsp self raising flour
1 tbsp corn flour
1 tbsp rice flour
12 medium sized prawns
Directions
Cook rice with chopped vegetables, butter, salt, and pepper in a rice cooker. Follow your rice cooker instructions for the correct ratio of rice to water.
While the rice is cooking, prepare batter for fried prawns by mixing the dry ingredients with cold water (start with ½ cup) until you get a thick slurry mixture. Once done, add 1 tablespoon of cooking oil and mix well.
Heat up some cooking oil in a wok or frying pan.
Dip the prawns in the batter and fry them until golden brown. Remove from pan and set aside.
Mix the cooked butter rice well, and serve accordingly.
