These quick, open-faced sandwiches are perfect for any time of the day.
2 sourdough bread slices, toasted
1 avocado, mashed
1 egg, boiled and sliced
1 Big Heart Tomato, sliced
2 Glow Cherry Tomatoes, sliced
4 – 5 Sweet Basil leaves, finely chopped
1 small bunch of chives, finely chopped
⅓ tbsp lemon juice
½ tsp balsamic vinegar
Coarse black pepper, and salt to taste
Mash avocado in a bowl. Season with lemon juice, and coarse black pepper. Mix well and set aside.
Toast sourdough bread slices in a toaster or on a pan. Once they turn golden brown, remove and set aside.
Top the toasted bread slices with mashed avocado.
Top a slice with Big Heart Tomato, and Sweet Basil. Season with salt and a drizzle of balsamic vinegar.
Top another slice with boiled egg, and Glow Cherry Tomatoes. Garnish with a sprinkle of chives and black pepper.
Play around with different combinations of toppings based on what you like or have in your kitchen.
