These quick, open-faced sandwiches are perfect for any time of the day. Ingredients 2 sourdough bread slices, toasted 1 avocado, mashed 1 egg, boiled and sliced1 Big Heart Tomato, sliced2 Glow Cherry Tomatoes, sliced4 – 5 Sweet Basil leaves, finely chopped1 small bunch of chives, finely chopped⅓ tbsp lemon juice ½ tsp balsamic vinegar Coarse black pepper, and salt to taste Directions Mash avocado in a bowl. Season with lemon juice, and coarse black pepper. Mix well and set aside. Toast sourdough bread slices in a toaster or on a pan. Once they turn golden brown, remove and set aside.Top the toasted bread slices with mashed avocado.Top a slice with Big Heart Tomato, and Sweet Basil. Season with salt and a drizzle of balsamic vinegar. Top another slice with boiled egg, and Glow Cherry Tomatoes. Garnish with a sprinkle of chives and black pepper.
